Eat More Plants

Look, no matter what you’ve heard, plant based meals can be truly delicious. I get that the standard American diet revolves around meat, so that may seem improbable, but it’s true. When we center meat, we miss out on a lot of opportunity for variety. When I started eating a plant based diet in 2011, I began trying foods I’d never even heard of before. My palate was delighted by the variety of flavors and textures and possibility as I was awakening to the world of plants! From chia seeds to delicata squash, from enoki mushrooms to millet, it was a delicious discovery. And it continues to be more than a decade later as I still discover new plants to enjoy on a regular basis.

Start being more adventurous in the produce section. Google recipes of new vegetables you find right there at the store. See if any of it looks or sounds good to you. If so, buy it! Take those veggies home with you and try new plant based recipes! Make this a journey of palate development and exploration. Get your family involved. Have fun! Eating more veggies doesn’t have to be a chore because it turns out, if you cook vegetables properly they are incredibly delicious.
